Chicken Rub | top

1 tsp celery salt
2 Tbsp garlic salt
3 Tbsp brown sugar
2 Tbsp white pepper
1 Tbsp paprika
1 tsp crushed red pepper
juice of 1 lemon
1 tsp onion powder
1 tsp ground cumin
2 tsp grated lemon zest

Combine all ingredients. Brush outside of chicken with olive oil, and rub with spice mixture. Place in zip-lock bag and marine for 8 to 12 hours. Cook chicken in smoker or grill to an internal temp. of 170 until juices run clear.

 

 

Meat Rub | top

1/2 cup paprika
1 cup brown sugar
1 cup white sugar
2 Tbsp onion powder
2 Tbsp garlic powder
1 Tbsp basil
1 tsp ground bay leaves
2 Tbsp ground coriander
2 Tbsp chili powder
1/2 cup salt
1/2 cup black pepper
1 Tbsp thyme
1 Tbsp marjoram

Mix all ingredients together. Rub onto meat, letting it marinate 4 to 6 hours before cooking.
